The Slow Food movement in France
A non-profit association financed by its members, Slow Food was founded in 1989 to counter the phenomenon of fast food and fast life, in reaction to the disappearance of local food traditions.
This is to encourage citizens to be aware of their food, where it comes from, what it tastes like, and how our food choices affect the rest of the world.
Slow Food affirms that we all have a fundamental right to enjoy quality food, and therefore a duty to protect the heritage of products, traditions and cultures that make this enjoyment possible.

Bread, one of the pillars of Western food, is considered one of the jewels of French gastronomy. Biodiversity in the cereal sector is experiencing unprecedented erosion. This loss of agrobiodiversity endangers the survival of local and sustainable agricultural systems.
